Work offsets are usually titled G54, G55, G56, G57, G58, G59. You can use the controller to jog your machine to a specific location (like the corner of one of your parts) and write down the specific axis' X,Y,Z location for inputting into a specific work offset (say G55)
To select the specific work offset numbers, you should be able to navigate through the NK105 menu like this:

To change the specific work offset numbers (location), you should be able to navigate through the NK105 menu like this:
4. Oper Param > 5. Offset > 2. Work Offset > 2. G55 offset (or choose whatever one you want to edit) > enter specific values for X,Y,Z (these can be attained from when you jogged your machine to the specific part and wrote down the X,Y,Z position values)

Each work offset will have different X,Y,Z values to correspond to different locations on the machine table.
Your CAD / CAM software will also call out a specific work offset number so that when you start that program, the controller takes your machine to the right area.
